The anti-nutritional factors present in unprocessed soybeans, of which Trypsin is one of the most important, lead to the low acceptability or demand for soybean products as they prevent the digestibility of proteins.

To eliminate anti-nutritional factors and ensure protein digestibility, soybeans must be processed at critically important temperatures to obtain the highest possible nutritional value.
